How to pick out a ripe avocado?

Avocado is a healthy food that can be consumed in many ways. To test it, give it a gentle squeeze. If it lightly yields to some pressure, then it’s probably still good and ready for consumption. If it feels soft or mushy with little pressure, then it’s likely past its prime time.

Keto Chocolate Mousse Ingredients

  • 2 ripe avocados – peeled
  • 3/4 cup heavy cream
  • 1/2 cup keto-approved chocolate chips, melted
  • 1/4 cup honey or your favorite keto sweetener
  • 3 tbsp. Unsweetened cocoa powder
  • 1 tsp. vanilla
  • 1/2 tsp. kosher salt
  • chocolate curls for garnish (optional but recommended – Keto-Friendly)

Fresh Keto Chimichurri Sauce – Paleo Diet Friendly

  • The recipe makes one and a half cups

With just the right mix of herbs, spices, vegetables, and sauces, this Keto Chimichurri Sauce is perfect for beef, salmon, or chicken. This is vegetarian-friendly as well.

Keto Chimichurri Sauce Ingredients

  • 2 large shallots peeled & sliced thinly
  • 1 cup fresh cilantro leaves, washed and dried
  • 1 cup Italian parsley leaves, washed and dried
  • 1/4 cup oregano leaves (about 6 sprigs) washed dried dried
  • 6 cloves of fresh garlic, peeled and smashed
  • 2 Fresno chili peppers, washed and seeded
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar or apple cider vinegar
  • Salt & Pepper to Taste

Directions

  1. Add to a large food processor after preparing your green herbs, peppers, garlic, and shallot.
  2. Combine the vinegar with the vegetables and pulse a few times to break down the ingredients.
  3. Add the olive oil and blitz the sauce until thoroughly chopped. You’ll know when you’re at the right consistency when the mixture looks like a finely chopped salsa.
  4. Taste and season with salt and pepper.
  5. Transfer the sauce to a large glass bowl and allow it to sit at room temperature for 30 mins before serving. This resting time allows the flavors to meld.
  6. Refrigerate any remaining sauce and use it within 3-5 days.

Keto Blueberry Muffins

Why keto blueberry muffins? Some mornings, we desire something sweet to go with our coffee.

Most breakfast pastries lack nutritional value and can leave us feeling hungry before lunchtime due to their high sugar content. While cinnamon rolls are delicious, they aren’t the ideal breakfast food.

These muffins were specifically created to satisfy those cravings while providing protein and fruit without any added sugar – a triple win!

Are other fruits suitable for this recipe aside from blueberries? Absolutely! Raspberries, strawberries, and blackberries would all serve as lovely substitutes; simply avoid using overly sugary fruits.

Keto Blueberry Muffins Ingredients

  • 2 1/2 cups. almond flour
  • 1/3 cup keto-friendly sugar (such as Swerve or Monk fruit extract)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1/3 cup melted butter
  • 1/3 cup unsweetened almond milk
  • 3 large eggs
  • 1 tsp. Pure vanilla extract
  • 2/3 cup fresh blueberries
  • Zest of 1/2 lemon (optional)

  3. Whisk to combine almond flour, Swerve, baking powder, baking soda, and salt in a large bowl.
  4. Whisk in melted butter, almond milk, eggs, and vanilla until well combined.

These little balls of fat, known as Keto fat bombs, can become your close companion. Don’t be intimidated by the name, as they are ideal for satisfying your appetite.

Keto Fat Bombs, what are they? 

Fat bombs contain an abundance of beneficial fats and a small amount of carbohydrates, making them an ideal choice for those following a keto diet.

However, verify that the peanut butter and chocolate chips you use are free from sugar, and only use dark chocolate chips, and check their low amount of carbohydrates and very low added sugar – I found some that carry some 18g of added sugar..

Fat bombs can help you feel satiated for a longer period, encourage the process of ketosis, and may potentially enhance metabolism. You can store them in your refrigerator and consume them whenever you want.

Ingredients:

  •  8 oz. Cream cheese at room temperature and softened.
  •  1/2   cup  keto-friendly peanut butter
  •  1/4   cup coconut oil, plus 2 tbsp.
  •  1/4   tsp  kosher salt
  •  1/2   cup Dark chocolate chips that are suitable for a keto diet (such as the ones made by Lily’s brand).

Directions

  1. Cover a little baking tray with parchment paper.
  2. Mix cream cheese, peanut butter, ¼ cup of coconut oil, and some salt in a medium-sized bowl.
  3. Beat the mixture using a hand mixer until everything is fully combined. This mixing may require about 2 minutes.
  4. Place the bowl in a freezer to become slightly firm, which should take 10 to 15 minutes.
  5. After the peanut butter mixture has become firm, scoop out tablespoon-sized portions using a small cookie scoop or spoon.
  6. Put them in the refrigerator for 5 minutes until they have also hardened.
  7. Create a chocolate drizzle by heating a mixture of chocolate chips and 2 tsp of coconut oil in a microwave-safe bowl.
  8. Heat for 30 seconds at a time until the mixture has fully melted.
  9. Drizzle the chocolate over the balls made of peanut butter, and let them harden for 5 minutes by placing them back in the fridge.
  10. To keep it in storage, it is recommended to keep it covered in the fridge.

  • 1 1/2 cups smooth unsweetened peanut butter
  • 1 1/4 cups coconut flour
  • 1/4 cup keto-friendly powdered sugar, such as Swerve or Monk fruit
  • Pure vanilla extract as desired
  • 1 Pinch of kosher salt
  • 2 cups keto-friendly chocolate chips
  • 2 tbsp. coconut oil
  • 1 tbsp. Flaky sea salt, for garnish

Directions

  • Line an 8″-x-8″ baking pan with parchment paper and grease with cooking spray.
  • In a medium bowl, combine peanut butter, coconut flour, powdered sugar, vanilla, and salt.
  • Stir until smooth and pour into the prepared pan, smoothing the top with a spatula.
  • Place in the freezer for 30 minutes to firm up.
  • Combine chocolate chips and coconut oil in a medium microwave-safe bowl.
  • Microwave, stirring every 30 seconds, until smooth and pourable.
  • Pour chocolate over the peanut butter layer and smooth. 
  • Garnish with flaky sea salt and place in the freezer to harden for 2 hours or up to overnight.
  • When ready to serve, remove the peanut butter bars from the baking dish and cut them into squares.

Keto Yogurt Rice, Reinvented The Low-Carb Way!

  • Preparation time: 10 minutes
  • Cooking time: 10 minutes
  • Serves 4 hungry people

One of my family’s favorite comfort foods is Keto yogurt rice. Cooked rice is mixed with yogurt and topped with a combination of mustard seeds, red chilies, asafoetida (see the link for details), curry leaves, and peanuts sautéed in oil.

This recipe is the ultimate cooler on hot summer days.

Keto Rice Yogurt is a simple but very nutritious dish. I substitute broccoli rice for traditional rice, and it’s perfect when you need a little bit of something light on a warm day. To make this version, steam the broccoli or even cauliflower and then put it in the blender with some yogurt and garlic.

Keto Yogurt RiceIngredients

  • 2.5 cups Broccoli or cauliflower rice
  • 1/2 cup Greek yogurt
  • 1 tablespoon Cooking oil
  • 1 tablespoon Mustard seeds
  • 3 Dried red chilies
  • 1/2 teaspoons Asafoetida or another of your favorite
  • 4-5 Curry leaves (optional)
  • 4-5 Peanuts chopped (optional)
  • Salt to taste

Directions

  1. Put the broccoli or cauliflower rice in a microwave-safe bowl, cover with a paper towel, and cook for four minutes. Cool the rice for 10 minutes.
  2. Add the yogurt to the rice and mix well.
  3. Add salt as needed and mix well.
  4. In a small saucepan, warm up a tbsp of oil and add the mustard seeds, red chilies, asafoetida, curry leaves, and peanuts. When the mustard seeds start popping, pour the mixture on the yogurt rice and mix well.
  5. Enjoy!
