Keto Bacon Cups

Keto Bacon Cups Ingredients:

  • 12 slices lower-sodium bacon, halved
  • 1lb (16oz) Ground beef, lean
  • 4 oz Cream Cheese
  • 3/4 cup Colby and Monterey Jack Cheese, shredded
  • 1/4 tsp Ground Turmeric
  • 1/4 tsp Ground Coriander
  • 1/4 tsp Paprika
  • 1 tsp Onion powder
  • 2 tsp Garlic powder
  • Salt, to taste*
  • Pepper, to taste*

Preparation Instructions:

  1. Preheat oven to 350 degrees F.
  2. -Arrange bacon in a lightly greased jumbo muffin pan, with 3-4 pieces per cup. (An easy arrangement seems to be 2 pieces around the edge and 2 pieces making an X on the bottom. This forms a very sturdy ‘basket’)
  3. -Put the bacon in the oven for approximately 10 minutes (until the edges are crisp)
  4. -Combine the cream cheese and all spices in a bowl until smooth. Set to the side for now.
  5. -Brown the ground beef in a medium saucepan. When it’s nearly done, add the cream cheese mixture and simmer until the consistency is uniform throughout.
  6. -Spoon half of the beef mixture into the bacon cups, pressing it firmly into the bottom so it holds nicely.
  7. -Add half of the shredded cheese on top of the beef.
  8. -Add the rest of the beef mixture, followed by the rest of the cheese.
  9. -Bake for an additional 10 minutes or until cheese is golden.
  10. -Let cool slightly before serving. Can hold well in the fridge for 3 days.
