🌊 Spiced Coconut Curry with fish

This recipe transforms white fish into an aromatic Asian-inspired dish featuring chili, ginger, and creamy coconut.

Fish Selection Tip:
Ask your fishmonger for fresh fish fillets cut sashimi-style. Always buy and consume your fish the same day, or at maximum, within the next day. Don’t store raw fish longer than that.

Marinade:

  • 2 kg firm white fish fillets, chunked
  • 3 crushed garlic cloves
  • 1 thumb ginger, grated
  • 1½ tsp red chili powder
  • 1½ tsp turmeric
  • 1 tsp salt
Curry with fish

Coconut Gravy:

  • 340ml coconut milk
  • 30g tamarind pulp
  • 100ml vegetable oil
  • Whole spices (1½ tsp mustard seeds, 1½ tsp fenugreek, 2 cloves, 3 cardamom pods, 1 cinnamon stick)
  • 2 large finely chopped onions
  • 2 tsp cumin powder
  • Fresh black pepper
  • Fresh cilantro for garnish

Method:

  1. Marinate:
    Combine fish pieces with salt, turmeric powder & red chili powder. Mix thoroughly and refrigerate for 30 minutes.
  2. Prepare Tamarind:
    Soak the tamarind pulp in a cup of warm water for 20 minutes.
  3. Cook Base:
    Heat oil in a large saucepan over high heat. Add the mustard seeds, fenugreek, cloves and remaining whole spices until fragrant.
  4. Make Gravy:
  • Add onions, remaining ginger and garlic
  • Fry until golden brown (about 10 minutes)
  • Strain tamarind liquid into a pan
  • Add coconut milk and cumin
  • Simmer for 15 minutes
  1. Final Stage:
  • Gently add marinated fish
  • Simmer for 7 minutes until just cooked
  • Garnish with fresh cilantro

Serve hot with steamed Basmati rice.
